today was nice. battleship tours and downtown adventures ending in a private balcony dinner. 8 miles of walking and a pit stop on the way home. good, good saturday.

we’re almost to the weekend, we got this.

HEY IT’S FRIDAY

this week went by pretty fast (thank god), I got paid, and bought my mom a christmas present.

so far so good. let’s keep it that way, shall we

this week’s new recipe is this one pot stuffed pepper casserole (with slight variations) 

zak really liked it (and so did I) so it’s boyfriend approved and since it’s a one pot recipe it’s girlfriend approved too.

to save you from scrolling through the most boring story ever of how this came to be/enjoyed, here’s all you need to know

Ingredients
  • 1 lb extra-lean ground beef
  • ½ cup diced yellow onion
  • 3 cloves garlic, minced
  • 2 cups dice large bell bell peppers
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 14.5 oz can diced tomatoes, with juices
  • 2 cups beef broth
  • 8 oz can tomato sauce
  • 1 Tablespoon soy sauce
  • 1 teaspoon Italian seasoning
  • 1 cup RiceSelect Texmati® White Rice, uncooked
  • 1½ cups shredded cheddar cheese, or cheddar blend
Instructions
  1. Over a medium-high heat brown ground beef with onions and garlic, cook for about 5–7 minutes, breaking into small pieces as the beef browns.
  2. Add peppers and salt and pepper and cook for about 5-7 more minutes, until peppers have started to soften. (NOTE: if you didn’t use extra lean beef, you will need to drain off some of the fat at this point)
  3. Reduce heat to medium and add in tomatoes with juice, broth, tomato sauce, soy sauce and Italian seasoning. Stir until well combined. Bring mixture to a boil.
  4. Now add in your uncooked rice. Return to a boil, and reduce heat to low. Cover and simmer for 25 minutes, until rice is tender.
  5. Remove from heat and sprinkle with shredded cheese.

ok so basically I didn’t use minced garlic (didn’t have any garlic cloves) and instead just some garlic powder, I didn’t use the tomato sauce (again, didn’t have any-forgot to buy some at the store) and I used instant brown rice because regular rice is a pain in my ass. 

ignore the instructions for the most part-brown the beef and the onions together and then add everything else (except cheese) until the rice is tender and everything is hot and then put it in some bowls, top with cheese, mix around, and enjoy!

I went home on my lunch break and john was on crack (again). I caught her about to jump on the blinds so I picked up the pillow ready to throw it at her and she saw me and let out the saddest little “I’m sorry” meow and hid behind the blinds for a good 5 minutes.
